Hi Jason,
You can't without a complete reinstall.
However, you shouldn't even want to do that. If it is the email you are
worrying about, that hasn't got anything to do with the local AD domain
name. Run the CEICW wizard and fill in your mysite.ca domain when it is
asking for the Exchange details.
